Merry Sugar Cookies

Christmas and cookies go hand in hand at our home and I always look forward to this yummy tradition. Making and decorating sugar cookies is a must for all of my kids. I love my box of cookie cutters in all the shapes and sizes which I use for many holidays. At this time of year, the classic tree, snowman and star are the Christmas favorites and have made a Lasting Impression each December. The following recipe is our favorite and I know Santa will love them too. You may want to make a double batch so you have plenty to enjoy and share with others.

Dough

3 eggs
1 cup melted butter (allow to cool)
1 1/2 cups sugar
1 tsp baking powder
1 tsp lemon extract
3 1/2 cups flour
Beat eggs; add sugar & lemon; add butter, beat again.
Add baking powder with the first 2 cups of flour, mix. Then mix in the rest.
Chill dough before rolling – about 1 hour. Keep extra dough in the refrigerator.
Roll, cut and place on ungreased cookie sheet. Sprinkle with sugar or wait and frost when cooled.
Bake at 400 for 8-9 minutes.

Use good quality ingredients will yield wonderful flavor. For the best dough, roll out a ball large enough for 8-10 cut outs. Sprinkle your surface and rolling pin lightly with flour then roll out to about 1/4 to 1/8 inch thickness. Be efficient with your cuts by placing your cookie cutters close together varying the directions. Save and refrigerate trimmings to make a second ball with additional scraps. Each time you roll out your dough it will become a bit stiffer as it accumulates more flour with each roll.

For a quick finish, you may decide to sprinkle unbaked cookies with colored sugar and then bake. We prefer the creative time spent frosting and decorating after the baked cookies are cooled. There is an artist in all of us! Remember to add some tea, hot cocoa and some holiday music and embrace your time together.

Frosting

1/4 cup butter, soft
2 cups powdered sugar
2 Tbl + milk
small amount of flavoring (vanilla/lemon/almond)
Cream together and divide into bowls to add food coloring of your choice. Mix in color.


Frost cookies and decorate with lots of sprinkles & candies.
